If a large amount of electrolyte is added to a lyophilic system, the dispersed substance precipitates. This is known as salt-out, which is different from the coagulation observed with the lyophobic colloids. It is believed that the stability of the lyophilic systems depends upon their charge and hydration. Large amounts of electrolytes dehydrate the particles in addition to reducing their -potentials. It is generally accepted that salting-out depends on the nature of the ions. Based on experimental observations, a series has been created for anions and cations reflecting their ability to salt out. This series is known as Hofmeister series.
